Mini Frittatas and PB with Caramel Chunks

Sometime last week I was watching the Everyday Italian and I just had to try to make this. Mine looks nothing like it did on tv because mainly I poured the eggs too high up the next time I do a better job I will post the picture! I have to say it is sooooo delicious!! I only put parsley on some as I wasn't sure how I would like it next time I am going to put parsley on all of them and really follow instructions! Here is the recipe if you want to try it out. Here is the recipe you should try it out if you like eggs and it doesn't take long at all!
Mini Frittatas

Cook Time:10 min
Level: Easy
Serves: about 40 mini frittatas

Nonstick vegetable oil cooking spray
8 large eggs
1/2 cup whole milk
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
4 ounces thinly sliced ham, chopped
1/3 cup freshly grated Parmesan
2 tablespoons chopped fresh Italian parsley leaves

DirectionsPreheat the oven to 375 degrees F. Spray 2 mini muffin tins (each with 24 cups) with nonstick spray. Whisk the eggs, milk, pepper, and salt in a large bowl to blend well. Stir in the ham, cheese, and parsley. Fill prepared muffin cups almost to the top with the egg mixture. Bake until the egg mixture puffs and is just set in the center, about 8 to 10 minutes. Using a rubber spatula, loosen the frittatas from the muffin cups and slide the frittatas onto a platter. Serve Immediately.

I have been wanting to post about this peanut butter for a long time. It is so good! It has little caramel chunks in it!

I like the sound of making frittatas in a muffin pan. That peanut butter sounds great!
