Yummy Veggies!

So rain rain rain all morning! I decided not to let the gloom get to me and make myself some colorful eats!



I marinated some brussel sprouts, onions, orange and red pepper along with some potatoes. I just used olive oil, chilli peppers and paprika as my sauce. I was too lazy
to cook it last night so I let it sit in the refrigerator over night. This is a picture of it before been cooked.


Here it is in the oven after 25 min at 375 degrees.


Warmed up some low carb tortilla added hoisin sauce put the veggies and a few slices of chicken topped with cheese!


I managed to not mess it up here is a pic of it after I cut it in half looks good doesn't it.


Here are my left overs for later today. I still have more that is not cooked yet. I really like this dish that I made and I am sure you me posting about it more often. Next time instead of chicken I am going to use something else hmm tofu maybe!

Whoa, looks awesome! I LOVE brussel sprouts, often roast them w olive oil and sea salt.

I love roasting a bunch of veggies! They are so flexible that way, you can make lots of meals.

Oh I HAVE to try this!! This looks delicious!! And since I'm on a meat break because of trauma I will have to make this for sure. Lol!
